Just out of curiosity, what kind of almond milk do you use? I usually buy Pacific Organic and would have to describe it less as "melting" and more like "curdling" when it hits my coffee (the almond particles sort of chunk out). Would love to cut down on my half & half usage!
What a wonderful list! I am thankful for YOU!

Hey Britt! I use unsweetened vanilla Almond Breeze, which is perfect with some agave to sweeten it. They also have it with sugar too. I love it! I'm also in the works to try to make some almond milk homemade - I'll keep you posted on it! If you love half and half, there are also some awesome vegan creamers out there - I know Silk has one amazing one, and then there's a Coconut Milk creamer too at Whole Foods. Hope that helps!

And Cheryl - I'm thankful for YOU!

Cannot recommend the coconut-based So Delicious creamer ENOUGH. Silk has always been too watery for me, and in a pinch I'll use it, but the So Delicious is THE BEST!!!

So thankful for you and your blog... and your continual inspiration. You rock!

(And I too am very grateful for kale... how did I ever live without it???) :)

Great list! It really perked up my day!

Homemade kale chips sprinkled with nutritional yeast is a favorite... as is unsweetened vanilla Almond Breeze. I do want to try So Delicious unsweetened Coconut Milk beverage.

Every time I watch Maxine's Dash for Freedom, my eyes tear up.

I know you think you love kale more then me, but I think you are wrong. Though I also think there is probably enough kale to go around! I will be missing you and your dance moves desperately tomorrow night at veggie prom. See you in a week!!

Love your list! I am grateful for kale and most of your list as well (I don't know your husband so I'll just sub my vegan hubby).
